Gelatin is a translucent, brittle solid substance, colorless or slightly yellowish, practically tasteless and odorless, which is obtained by prolonged boiling of animal skins and connective tissues. The word gelatin comes from the Latin word gelatus, which literally means to jellied or to freeze.

Gelatin is used as a stabilizer in products such as ice cream, jams, yogurts, cream cheese, and margarine. It is also used in the preparation of dry soups to give them thickness and a pleasant viscosity on the tongue. With the help of gelatin, it is possible to achieve clarification of some juices, for example, apple juice. It is also used as a refining agent for wine and beer.
