Description
Hangiri (ja:半切 or ja:飯切), also known as handai (ja:飯台 — “rice board” or “ ;rice bowl») — a round, flat-bottomed wooden tub or barrel used in the final stage of preparing sushi rice. Historically, khangiri is made of wood and held together with two metal hoops. The diameter of this dish can range from 30 cm (for home use) to 1 meter (for a restaurant). Hangiri and shamoji (wooden paddle) are commonly used to cook and cool rice. After cooking, the rice is transferred to hangiri. Here it is seasoned with rice vinegar, sugar and salt.
