Description
Adjika is a spicy Abkhaz seasoning that will be an excellent addition to many dishes. The mixture consists of red pepper, garlic and other spices.
Its creation is attributed to Central Asian shepherds, who gave salt to their sheep so that they would eat grass more actively and gain weight. Back then, salt was quite expensive, so sheep owners gave shepherds a mixture of salt and red pepper so that their farmhands would not eat it themselves. But shepherds got around this trick by simply adding to the mixture of herbs that grew in the highlands. That is why it was first called apirpil-jika or pepper salt. Subsequently, it received its usual name.
What does Georgian adjika consist of?
We offer a mixture that we prepare ourselves, using only fresh, absolutely natural herbs and spices, without harmful artificial colors and additives. They retain their aroma and fully reveal the taste of the ingredients during cooking. Adjika consists of 70% garlic, 20% red pepper, 5% salt and 5% herbs. Among the spices that are added to the base, you can find:
- coriander;
- basil;
- thyme;
- dill;
- marjoram;
- fenugreek;
- bay leaf.
How to use this Georgian seasoning?
Adjika can be used as a concentrated seasoning when preparing marinades and soups, or added during the process of marinating or directly preparing meat dishes. It perfectly complements vegetable salads and enhances the aroma and taste of tkemali sauce.
It should be borne in mind that this is a fairly spicy seasoning, so you should buy it only if you do not have digestive problems or acute diseases of the gastrointestinal tract. However, it is precisely this pungency that makes it so valuable, because adjika promotes the secretion of gastric juice and stimulates the digestive processes.
